A wholesome vegetarian dish that can be made cheaply and yet remains healthy.

Ingredients

  • 50g Red lentils
  • 50g Rice
  • 1/2 Onion, chopped
  • 1 Clove Garlic, chopped
  • 1/2 tbsp Curry Paste
  • 1 tbsp Sunflower Oil
  • 300 ml Water (boiling)
  • 1 tsp Parsley (dried)
  • Large handful (to taste) Frozen Peas

Method

  1. Gently cook onion and garlic in oil for 3-5 mins
  2. Add curry paste, cook for 30 seconds.
  3. Add lentils and rice, and stir well
  4. Add 300ml boiling water, turn heat down and put lid on
  5. Cook for 10 mins until rice just cooked, add parsley and season with salt
  6. Add peas, stir and put lid back on
  7. Cook for 3 mins (approximately) until peas cooked, check that not sticking and add a little bit of hot water if it is
