The perfect winter pudding!

Ingredients

  • 500g Rhubarb
  • 150ml Honey
  • 60g Caster Sugar
  • 60ml Orange Juice
  • 250g Raspberries
  • 10g Ground Cinnamon
  • 5ml Vanilla Extract
  • 250ml Whipping Cream

Method

  1. Peel and chop the rhubarb and place in a large saucepan with the honey, orange juice and cinnamon, simmer until soft then stir in the raspberries and continue to cook until the mixture is smooth. Remove from the heat and stir in the vanilla and place in a bowl into the fridge to cool.
  2. When the fruit is cold whip the cream and sugar together and fold into the fruit mixture then spoon into glass to serve.
