Single serving blueberry muffin in a mug - quick delicious and healthy: perfection!

Ingredients

  • 3tbsp flour
  • 1/3tsp baking powder
  • pinch of salt
  • 2tbsp blueberries (frozen work really well, and they're cheaper!)
  • 1/2tsp vanilla
  • 1tbsp oil (coconut oil is delicious here, but veg oil is fine too)
  • 1tbsp honey or sugar
  • 1tbsp milk (plus 1tsp if using normal sugar)

Method

  1. Mix together dry ingredients in a mug
  2. Add wet ingredients. Mix until just combined
  3. Microwave for 1 - 1 1/2 minutes
