Carefully constructed recipe using my knowledge in the field of both physics and chemistry.


  • 500g Chicken Thighs/Drumstick ON THE BONE
  • 50g Plain Flour
  • 150ml Buttermilk
  • 2 tbsp Cumin
  • 3 tbsp Paprika
  • 3 tbsp Oregano
  • 2 tbsp Onion Powder
  • 2 tbsp Salt
  • 2 tbsp Pepper
  • 1 tbsp Chilli Flakes


  1. Combine all dry ingredients and mix
  2. Add the buttermilk ( should create a thick batter if not add more/less to get right consistency)
  3. Dust chicken in flour first
  4. Then add to the batter and thoroughly coat
  5. Leave to rest for 30 minutes in the fridge
  6. Add chicken to a deep fryer or a pan with oil that covers all the chicken . Put on a high heat
  7. After 5 minutes reduce to a medium heat
  8. Leave for another 5 - 7 minutes
  9. Take chicken out and drain on a piece of kitchen roll
  10. Then eat it all up. YUM
